Creamy AF Mashed Lentil Salad & A Delish Sandwich I Made With It!

About that CREAMY MASHED LENTIL SALAD I devoured for lunch… I couldn’t wait to share the recipe with you babes because it’s legit the rock hard evidence that eating plant-based doesn’t mean you have to eat like a rabbit or have boring meals! In fact, it means you can eat the rainbow & have fun & get creative in the kitchen LIKE SO!

Basically, put it this way… whether or not you’re plant-based &/or a chopped egg lover, this salad will make you forget eggs exist! It’s delicious, full of flavour, simple & easy to make, full of vitamins & minerals, high in protein, fibre & good carbs & I use raw dijon mustard as a substitute for mayo to achieve that creamy texture we all look for in a mashed salad!

Lentils are one of my fave sources of plant-based protein because you can really do anything with them & they have such a delish nutty savoury flavour to them so they pair so well with all my fave greens & spices!

Use this salad as a topper for rice cakes or toast, stuff it into pita bread or ciabatta, make lentil lettuce wraps or tacos, eat it as is with a side of avocado or serve it as a side dish for your guests! However you eat it, I hope you love it as much as I do!

PSA: the only bread we use in our kitch is Ezekiel bread (or homemade loaves, DUH!). Yes, Ezekiel toast contains gluten but it’s sprouted & I personally have no issues digesting it! But, if you have Celiac’s or have a gluten sensitivity, you may be better off with a bread that’s certified gluten-free!

INGREDIENTS:

  • 1.5 cups cooked organic green lentils
  • 1 tbsp. raw Dijon mustard
  • Juice from 1/2 lemon
  • 3 tbsp. raw organic apple cider vinegar
  • 3 green onions, diced
  • 1/3 cup fresh cilantro
  • Black pepper to taste

TO MAKE IT:

  • Cook the lentils according to package directions. Let them cool off a bit so they don’t get the other ingredients soggy.
  • Once cooked & cooled, add the lentils to a bowl & mash them, keeping a few chunks here & there. Add the other ingredients & mix until combined.
  • Enjoy!
