I’m always posting my vegan meals so I figured I’d give you guys some inspiration for a staple meal my sis loves to have for breaky, lunch & dinner alike!
EGG WHITE OMELETTE:
- Spray a small skillet with avocado oil & sauté 2 handfuls of spinach until wilted & dark green.
- Pour in 1/2-3/4 cup of egg whites & let cook over medium heat.
- Use a spatula to round the edges & as they start to brown & fold upwards, move the skillet around to get the leftover liquid to cook through, then use a pancake spatula to fold it over in 3.
- Sprinkle with black pepper.
SWEET POTATO: She likes to have it with a side of either roasted sweet potato cubes or caramelized sweet potatoes (like the one pictured here), which I usually prep on Sundays!
VEGGIES ON THE SIDE, ALWAYS! Today, she used a can of hearts of palm drizzled with dried herbs
AVOCADO: For healthy fats, antioxidants, fibre, vitamin C & drizzled with organic balsamic glaze!
