Lentil, Pomegranate & Avocado Salad In A Turmeric Apple Cider Dressing

Lunching on plant-based deliciousness & I wouldn’t have it any other way!

I threw a bunch of fresh veggies, pomegranate for vitamin C + antioxidants & ready made sprouted green lentils into a bowl & drizzled on loads of apple cider, lemon, @truly.turmeric turmeric paste, vegan parm & black pepper & I went to ☁️ 9!

Delicious, nutritious, satisfying & super filling without feeling heavy, this bowl is the definition of LUNCH GOALS!!

INGREDIENTS:

  • 1/4 cup sprouted green lentils (cooked)
  • 1 cucumber
  • Handful cherry tomatoes
  • 1/4 avocado (cubed)
  • 1/2 tbsp. Truly Turmeric turmeric paste (substitute with tahini & ground turmeric if you prefer)
  • Black pepper to taste
  • 1 tsp. hemp hearts
  • Loads of vegan parm
  • 3 tbsp. raw organic apple cider vinegar
  • Juice from 1/3 fresh lemon
  • 1/4 cup pomegranate seeds

HOW?

  • Add all the ingredients to a bowl, mix until combined & top with any herbs or spices of choice!
  • Enjoy!
