Sweet Potato Breakfast Toast a.k.a. You Won’t Believe Your Eyes (Or Tastebuds!)

Sweet Potato Breakfast Toast a.k.a. You Won’t Believe Your Eyes (Or Tastebuds!)
Hi babes!
I was feeling something savoury for breakfast this AM so I whipped up an older recipe of mine that I haven’t had in forever & OHMAHGAWD did it ever hit the spot! Here’s a link to the older recipe if you want more inspo for how to dress these delicious toasts: Sweet & Savoury Sweet Potato Toast a.k.a. That Breaky Game On Fleek (& The Only Thing That Justifies Cheating On Ezekiel Bread!).
If you don’t know, now you know, SWEET POTATO TOAST  is a thing! I love my Ezekiel bread but this is a fun way to switch things up & get in a grain-free breaky with extra fibre, more vitamin C & antioxidants & naturally sweet flavour, all while still getting in them good carbs.
The best part is the toppings!!I like to top my slices with healthy fats & protein to make this a complete, satisfying & filling meal to kickstart my day. I also can’t do completely savoury or sweet. I need one of each!

Since sweet potato is sweet, it works well with both sweet & savoury toppings, so you can use anything from jam, apple butter, nut/seed spreads, avocado, hummus, coconut yogurt, salsa, sour cream, tzatziki, kimchi, fermented veggies, cheese, fruit, cinnamon, sprouts, crunchy veggies etc!

It’s best made on the spot so the potato is warm & crispy & it’s so easy, it only takes about 10-12 minutes!

  • 1 small sweet potato, sliced lengthwise into “toasts”
  • Toppings of choice; I used avocado, sprouts & vegan Parmesan, chipotle kimchi & more sprouts & creamy almond butter, banana & bee pollen.

  • Place the sweet potato slices in your toaster or toaster oven (I used my Breville Smart Oven) & toast for maximum time. Once they pop/they’re ready, flip them over & toast again!
  • If you’re using a toaster oven, broil them on high for 2 minutes to get them extra crispy.
  • Remove from oven/toaster, add toppings & enjoy!
