Here’s a really yummy, quick & simple salad recipe you can whip up for lunch or dinner!
Putting together a salad or a healthy meal in general doesn’t have to be complicated or take forever; you don’t have to use the fanciest or most expensive ingredients & you don’t have to stress about it!
All you need are fresh veggies, healthy fats, protein & an easy homemade dressing & BOOM, lunch is served & you didn’t have to drive yourself crazy for it!
Big salads & bowls are also a great way to make use of veggies & prepped ingredients so they don’t go to waste.
Here’s how I threw this babe of a salad together (& why you should too, because it is BOMB!!!!!)
- Throw 1/2 an avocado, cucumber, carrots, radish, hemp hearts, raw sliced almonds, 2-3 tbsp. cooked quinoa & fennel into a bowl!
- Season with your fave homemade or store-bought dressing (I used my homemade lemon apple cider vinegar dressing – recipe on the blog!) & toss to coat.
- Add nutritional yeast & some fermented veggies, kimchi or sauerkraut for probiotics & gut health & enjoy!
