Shredded Cabbage, Chickpea & Seaweed Salad In My Lemon Apple Cider Vinaigrette

LEGIT had the definition of #saladgoals for lunch the other day.

I spent an hour washing & prepping all the fresh veggies we bought yesterday to restock our fridge because it makes meal prepping so convenient throughout the week & I got a craving for a fresh & crunchy salad & let me tell ya, it was BOMB!

Full of veggies, plant protein, fibre, antioxidants, healthy anti-inflammatory fats & organic seaweed & Simple Mills cracked black pepper crackers to top it off & make it EVEN MORE perfect!

BTW, I’ve been doing a lot of research about seaweed & it turns out it has amazing health benefits & is a really beneficial food for those who live a plant-based lifestyle.

It’s full of iodine & tyrosine, which support thyroid function, contains tons of protective antioxidants, as well as fibre & polysaccharides that support gut health, fight inflammation & help control blood sugar levels, not to mention it’s a great source of other vitamins & minerals, such as B12, vitamins K & E, amino acids & trace minerals!

TO MAKE IT:

  • Add 2 cups shredded cabbage, 1 small cucumber, a few sliced radish, 1/2 tbsp. hemp hearts, 1/4 avocado in cubes & 1/3 cup organic chickpeas to a mixing bowl.

  • Season the veggies in the same bowl with any dressing of your choice (I used my homemade go-to lemon apple cider vinaigrette – recipe here), mix it all together & top with some seaweed & your fave crackers!
  • Enjoy!
