My mom used to make sautéed leeks all the time but TBH, the size of the veggie made me think they were so hard to make so I never really tried them but yesterday, they were on sale so yo’ girl picked some up & sautéed them & OMG are they ever delish!
They’re also jam packed with health benefits, such as boosting heart health, fighting inflammation, bone strength, protecting blood vessels from free radical damage due to flavonoid content & they’re full of fibre, vitamins A, C & K, iron, magnesium & B vitamins!
This dish is full of flavour & great to have as a side with protein & grains, or to use as a topping for toast with hummus, sandwich stuffer or as an add on to bowls or salads!
- 1 large bunch leeks (chop the tops & ends & then chop & separate the stalks)
- 4 cloves garlic, minced
- Avocado oil spray
- Sea salt & black pepper
- Heat a large skillet over medium high heat & spray with avocado oil.
- Once heated, add the garlic & sauté for a few mint s until browned & fragrant.
- Add the leeks, black pepper & sea salt to the skillet & sauté over medium high heat until they begin to shrink & caramelize, for about 10 minutes or until cooked through.
