Kimchi, Avocado & Chickpea Salad a.k.a. That Good For Your Gut (& Everything Else) Salad!

I’m sure most of you are familiar with kimchi because it’s delish & if you’ve been to a Korean restaurant, you’ve probably had it! It’s not only the first thing they serve you at a Korean restaurant; in fact, it actually has TONS of health benefits & is a fermented probiotic food! It undergoes a fermentation process during which the flavour, texture + benefits of the kimchi improve + certain probiotic-rich acids are formed, which are known to:

  • suppress harmful bacteria + stimulate beneficial bacteria
  • clean the intestines
  • boost the body’s antioxidant ability + fight aging
  • boost colorectal health, brain health + digestion
  • reduce constipation
  • heal the skin
  • strengthen immunity (because most of our immune system is stored in our gut) + soothe allergies
  • reduce sugar addiction + provide additional fibre

This salad is loaded with all of the above & more! It’s delicious, creamy, satisfying, so nutritious + makes for a perfect simple + easy meal!

YOU NEED:

  • 1/4 cup organic chickpeas
  • 1/4 cup Tout Cru Fermentation chipotle kimchi (or any kimchi of your choice or fermented veggies/sauerkraut)
  • 1 small avocado
  • Handful of cherry tomatoes
  • 1 small cucumber
  • Handful fresh cilantro
  • 1/2 cup sautéed spinach/kale OR 1 cup fresh greens
  • 2 tbsp. raw organic apple cider vinegar
  • Juice from 1 lemon
  • 1 tsp. nutritional yeast
  • Sea salt + black pepper
  • 1 tsp. Dijon

TO MAKE: Add all the ingredients to a bowl, season in the same bowl, toss to coat & enjoy!
