Red Lentil, Goji Berry & Corn Salad In A Red Wine Vinegar & Coconut Vinaigrette a.k.a. Rainbow On Mah Plate!

My goodness… this salad is plant-based deliciousness at its finest!

Red lentils are one of my favourite sources of plant protein & they’re probably the closest thing to meat in terms of flavour! They have a delicious nutty taste & add so much nutrition & heartiness to a dish!

INGREDIENTS:

FOR THE SALAD:

  • 1 cup organic red lentils, cooked according to package directions
  • 1 tbsp. raw pine nuts
  • 1/4 cup organic Goji berries
  • 2 small cucumbers, diced
  • 1 red onion, diced
  • 1/2 bell pepper, diced
  • 1 can organic corn
  • 2 small carrots, diced

FOR THE DRESSING:

  • Juice from one large lemon
  • 2 tbsp. red wine vinegar
  • 2 tbsp. coconut vinegar
  • 1/2 tsp. coconut flower syrup
  • 1 tsp. dried parsley
  • 1 tsp. garlic powder
  • A pinch of cayenne pepper
    • Sea salt + black pepper

TO MAKE:

  • Cook the lentils according to the package directions.
  • While the lentils cook, chop the other ingredients & add them to a bowl.
  • Once the lentils are cooked & cooled off, add them to the bowl with the rest of the ingredients.
  • Season the salad directly in the bowl with the dressing ingredients & toss to coat.
  • ENJOY! 🙂
