You know when something tastes so good, you just can’t find the words?
YA… THIS SMOOTHIE BOWL… exactly that!
Here’s my post-workout breaky: STRAWBERRY CHIA + AÇAI COLLAGEN SMOOTHIE BOWL! It’s so thick, silky & smooth that it’s basically ice cream. YES, you read right, I had ice cream for breakfast. In a perfect world, I’d have ice cream for breakfast everyday. COOKIE DOUGH ICE CREAM. But today, I’ll settle for this, which TBH, is so delish, cookie dough don’t stand a chance (and if you know me, that’s saying a lot… I LIVE FOR COOKIE DOUGH).
Strawberries are full of antioxidants, which help keep the cells healthy & strong & boost immunity. They also contain flavonoids that help the body create a hormone responsible for lowering glucose levels + boosting metabolism. AND OF COURSE, they’re full of fibre!
Chia seeds add even more fibre to the mix, healthy fats, vitamins & minerals & are amazing for the skin!
Açai is great for digestion & detoxification, fights aging, boosts energy & naturally lowers cholesterol & promotes heart health.
Collagen is amazing for energy, amino acids + protein, promotes gut health by strengthening the intestinal lining & preventing leaky gut, boosts skin, hair & nail health, fights aging, helps with muscle recovery & is a great post-workout supplement to ensure maximization of the work you put in during your workout because it helps build strong muscles, joints & tissue.
I topped this nutritious breaky with shredded coconut (ALWAYS make sure it’s unsweetened), blueberries, raw organic (+ unsalted) slivered almonds, Ceylon cinnamon & Purely Elizabeth mango almond muesli! SO YUM! You can top it with whatever your heart desires, just make sure to get some healthy fats, good carbs, fibre & protein in there, especially if you’re having this post-sweat!
This bowl is the perfect balance between silky, smooth, creamy, naturally sweet, delicious, nutritious, REAL FOOD, crispy, crunchy, satisfying, energizing & filling!
The key to a good smoothie bowl is texture. You don’t want it to pour like a smoothie would… in fact, you want it to be more of an “eating a smoothie with a spoon kinda situation”, or like EATING ICE CREAM! The trick is to add less liquid than you would to a regular smoothie. With my regular smoothies, I’ll generally use about a cup of liquid, dividing it evenly between one of my homemade nut/seed milks & filtered water. But today, I used just 1’/2 cup of almond milk & it made all the difference! I also find that adding a scoop of protein powder or collagen really helps make it thick & creamy & adds a heck of a ton of nutrition!
- 1/2 cup plant-based milk of your choice
- 1 cup frozen sliced strawberries
- 1 scoop Vital Proteins Mixed Berry Collagen Peptides
- 1 tbsp. organic chia seeds
- 1 tbsp. cold-pressed organic acai powder
- 1/2 tsp. pure organic vanilla extract
- TOPPINGS: Ceylon cinnamon, shredded coconut, blueberries, raw organic slivered almonds & Purely Elizabeth Mango Almond Muesli
- Add all the smoothie ingredients to your blender & blend until combined & incorporated. You might have to scrape down the sides because the smoothie will be thick!
- Pour the smoothie in a medium bowl & top with desired toppings!
