Here today with a super simple one for you guys, but one that I think should be a classic in everyone’s kitchen! I mean, let’s be honest, there’s nothing like a bowl full of greens to make me HAPPY FOR DAYS.
Sautéing your greens is a great way to make use of some of your leftovers instead of letting them go to waste & sautéed greens also make for a great side dish with lean protein or add-in for Buddha bowls!
I used kale & arugula for this recipe but you can use any & all greens you have on hand! Just throw them into a skillet with minimal ingredients & you’re good to go! Kale, spinach, arugula, collard greens, cilantro, parsley, mint, dill, chives… have fun with it!
KALE is high in fibre, boosts digestion & detoxification, contains tons of calcium, copper, potassium, zinc & magnesium, vitamin K & vitamin B2, C, B3, A & E. it’s amazing for bone strength, fighting off disease, boosting immunity & glowing skin. It’s also a good source of plant protein & chlorophyll, as well as antioxidants & anti-inflammatory compounds.
ARUGULA is full of carotenoids, potassium, magnesium, iron & calcium, as well as phytochemicals that prevent illness & boost immunity. It’s also full of folic acid & boosts heart health, facilitates circulation, prevents macular degeneration & has anti-microbial properties.
- 2 boxes of arugula
- 1 box of kale or spinach
- 5 cloves garlic, minced
- Juice of 3 lemons
- 1-2 tbsp. dried herbs
- Sea salt & black pepper to taste
- Add the greens & seasonings to a large skillet. Toss to coat.
- Heat over medium-high heat & sauté until greens are dark green, wilted & cooked through!
