Today’s breaky was SWEET & SAVOURY SWEET POTATO TOAST And oh my goodness, I don’t even know where to begin!
Sweet potato toast is a great alternative to good ‘ol sprouted bread when you want to change things up & have a little fun! I’ll be honest with you, sweet potato toast is probably the only thing in the world that makes it okay for me to cheat on Ezekiel toast. Yes, that’s how much I adore my Ezekiel toast!
Sweet potatoes are a great source of fibre, antioxidants, vitamin C & good carbs, so you’re not skimping on health benefits or nutrients by making the swap!
I like to top my slices with healthy fats & protein to make this a complete, satisfying & filling meal to kickstart my day.
I also can’t do completely savoury or sweet. I need one of each!
I topped one with organic Greek yogurt, homemade peach & strawberry chunky jam, blueberries, banana & Ceylon cinnamon! The other is topped with citrusy guac, cucumbers & black pepper!
There are so many fun ways you can top these babies: egg white scrambles, sunny-side up eggs, cottage cheese, goat cheese or feta cheese, cream cheese, almond or peanut butter, apple butter, other jams, sliced cheese, pesto, etc. The possibilities really are endless!
Keep in mind that the amount of “toasts” you get from your sweet potato will depend on how big/wide your sweet potato is, so gage it as you go, but keep in mind that your sweet potato needs to fit inside a toaster, IN THE SAME WAY A REAL PIECE OF TOAST WOULD. I’m telling you babes, this is legit the closest thing to toast… It really seems TOO GOOD TO BE TRUE, but it ain’t).
I’m telling you guys, this is SO EASY & SO AMAZING, not to mention, so gorg, right? Once it’s ready, you’ll spend a solid minute ADMIRING THE BEAUTIFULNESS THAT YOU JUST CREATED (for as long as you can resist devouring it), THEN PROCEED TO DEVOUR IT. Oh & then… RUN TO THE GROCERY STORE TO BUY MORE SWEET POTATO FOR TOMORROW’S BREAKY (Because, who are we kidding? Lez be honest, YOU ARE SO MAKING THIS AGAIN!).
Here’s how to make it!
- 2 thick (about 1/4-1/2 inch thick) slices of sweet potato (Make sure to use a longer one so you have enough space for toppings)
- 1/2 small avocado
- Cucumber slices
- 2 tbsp. organic Greek yogurt
- 1 tbsp. homemade jam or other spread
- Blueberries & bananas
- Ceylon cinnamon
- Toast your sweet potato in your toaster or toaster oven for about 7-8 minutes or until cooked through. You may need to toast a few times, depending how strong your toaster is. Ideally, the sweet potato should become tender, start to slightly bubble & turn brown!
- Top with desired toppings & enjoy!
