TODAY’S LUNCHGREEK YOGURT, SAUERKRAUT, MICROGREENS & BOILED EGG SPROUTED TOAST & IT BLEW ME AWAY!

Today, I was craving all the carbs for lunch! One of my fave & healthiest sources of carbs is Ezekiel sesame toast! I absolutely love it & I really find that no matter what you top it with, whether it’s sweet or savoury, it’s ALWAYS DELISH! So I curbed the craving with some ezekiel toast, but that’s not all!

I topped it with my Greek yogurt “ranch” dip that I meal-prepped this week (Recipe here), some organic lime & dill sauerkraut, sunflower micro greens, flavourful spices & a perfectly boiled egg!

For those of you who don’t know just how beneficial sauerkraut is for your health… GUESS WHAT? IT IS!!!!!!

Sauerkraut is fermented, which also means it’s loaded with live & active probiotics, which have a beneficial effect on the gut & the rest of your health (because a large portion of our immune system lives within the gut & is run by bacterial organisms that live in our intestinal flora).

 Sauerkraut is great for:

Lowering the risk of digestive & GI illnesses & disorders, mood disorders cancer, hormonal imbalance, asthma, metabolic conditions, autoimmune diseases & food sensitivities.

Now, aside from all the probiotics you’re getting from the sauerkraut, you’re getting amped up nutrients from the sprouted toast, which also happens to be easier to digest than its refined counterparts! You’re getting tons of protein from the Greek yogurt, antioxidants, fibre, iron & vitamin K from the micro greens, healthy fats & more protein from the boiled egg, as well as tons of benefits for your skin & last but not last, tons of flavour from the paprika!

So how do you make this quick & easy lunch? Let me explain!

INGREDIENTS:

  • 1 slice of Ezekiel sprouted sesame toast OR gluten-free bread
  • 1 tbsp. of my Greek yogurt “ranch” blender dip
  • 1-2 tbsp. of lemon & dill organic sauerkraut (I used the one by Tout Cru Fermentation)
  • Sunflower micro greens or any other micro green of your choice
  • 1 boiled egg (KEEP IT YOLKY!)
  • Paprika & black pepper for garnish

HOW?:

  • Boil your egg!
    • Boil the perfect egg á la Kelly In The Kitch:
      • Add water to a small stockpot & bring to a boil.
      • Once bubbling & boiling, lower your heat to MEDIUM (usually, around a 4-5) & use a slotted spoon or just a tablespoon to drop your eggs gently into the water (LIL’ TIP: This prevents them from cracking when they hit the boiling water!).
      • Let them simmer for 8-9 minutes!
      • Once boiled, remove the pot from the heat & run the eggs under cold water for about a minute! (ANOTHER LIL’ TIP: This will stop the cooking process & make them a lot easier to peel, not to mention, you won’t burn your fingers!). Be gentle when peeling them as they’ll still be a bit warm to the touch & keep in mind they’re soft-boiled & still yolky!
  • Toast your bread.
  • Spread the Greek yogurt dip, top with sauerkraut, microgreens & boiled egg, then garnish with black pepper & paprika.
  • ENJOY!
