Vegan Buckwheat Groat Salad With Walnuts, Pecans, Fresh Herbs & Sweet Pear In A White Wine Vinegar, Lemon Honey & Cumin Vinaigrette a.k.a. Lunching (& Munching) On That Protein & Fibre!

OKAY, so last weekend, I prepped a really delicious quinoa salad as part of my meal prep! I could’ve made another quinoa salad & TBH, I wouldn’t have been mad about it because I’ve been absolutely loving it! BUT, I decided to hop on the buckwheat bandwagon today & let me tell y’all, I AIN’T MAD ABOUT THAT EITHER! Wow! Had I known how versatile & delicious this seed was, I probably woulda hopped on the bandwagon a little while go! BUT HEY, BETTER LATE THAN NEVER, RIGHT?

This salad is a super filling, nutritious & delicious lunch/dinner idea! The combination of the crunchy veggies, with the freshness of the herbs, the natural sweetness of the pear & the nuttiness of the walnuts & pecans is JUST RIGHT!

And don’t even get me started about the dressing. I know, it seems like a super simple combo, and really, it is. BUT THE COMBINATION OF FLAVOURS… THAT’S A WHOLE OTHER BALL GAME, BABY! Think citrusy lemon, tangy vinegar, sweet balsamic & honey & savoury cumin! LITERALLY, AN OHMAGOODNESS SITCH.

But why buckwheat, right?

So, first things, first, buckwheat, is actually a seed!

IT PACKS A HELL OF A LOT OF HEALTH BENEFITS, some of which are:

high in protein & fibre!
supports heart health!
may help prevent diabetes & digestive disorders!
contains disease-fighting antioxidants!
often referred to as a superfood!
provides highly digestible protein!
gluten-free & non-allergenic!
contains vitamins & minerals, such as: manganese, magnesium, phosphorus, niacin, zinc, iron, B6 & folate!
amazing for bone strength!
helps lower LDL cholesterol!

NOW WHO WOULDA THOUGHT A SEED COULD DO ALL THAT, RIGHT?

My loves, YOU WIL NEED:

FOR THE SALAD:

  • 1 cup of organic buckwheat groats;
  • 1.5 cups of water;
  • 1 tbsp. of raw organic apple cider vinegar;
  • Two heaping handfuls of broccoli florets;
  • 1 medium red onion, DICED;
  • 1 sweet pear, DICED;
  • 1/8 cup of raw organic walnuts, CRUSHED;
  • 1/8 cup of raw organic pecans, CRUSHED;
  • 1 cup of fresh cilantro, CHOPPED;
  • 1 cup of fresh dill, CHOPPED;

FOR THE DRESSING:

  • 1/4 cup of organic balsamic vinegar;
  • 1/4 cup of organic white wine vinegar;
  • 2 tbsp. of raw organic apple cider vinegar;
  • The juice of one organic lemon;
  • 1 tsp. of raw organic unpasteurized honey;
  • 1 tsp. of ground cumin;
  • 1 tsp. garlic powder;
  • 1 tsp. dried basil;
  • Sea salt & black pepper for seasoning.

NOW, LET’S GET DOWN TO BUSINESS. And by business, I mean, put on your apron, take out your stockpot, knives, cutting boards, spices, seasonings & LET’S GET TO IT BABY.

  • First things first, COOK YOUR BUCKWHEAT! Follow the package directions baed on the brand you are using, but for the ones I used, the package indicated to add 1 cup of groats to a stockpot with 1.5 cups of water & to cover and let it simmer for 15 minutes, so that’s what I did! And they came out perfectly! 
  • While your buckwheat is cooking, cut up all your veggies & set them aside or add them to a large mixing bowl!
  • Once the veggies are cut (& you’re annoyed AF, because let’s be honest, WHO ON EARTH LIKES CUTTING VEGGIES?), make your dressing! In a separate bowl, combine all the dressing ingredients & whisk away until they are fully combined & incorporated!

  • Once your buckwheat has cooked, let it cool for at least 15 minutes so that it doesn’t turn your veggies soggy & cook them!
  • Once the buckwheat has cooled, add it to the large mixing bowl with the rest of your veggies & nuts!

  • Then, season the salad with the dressing! Toss the salad until all the ingredients have been fully & evenly coated in the dressing & YOU’RE GOOD TO GO BABY!
  • Once seasoned, served immediately & DEVOUR!
    • Leftovers? No problem! (although I do really doubt it….). Store them in an airtight container & refrigerate! 
      • P.S. When you eat the leftovers, you might want to add another little splash of balsamic vinegar or white wine vinegar & maybe the juice of 1/2 a lemon & toss it again just to kinda revive it, YA KNOW WHAT I MEAN?!
