Back at work & still in need of some healthy on the go snacks! The answer? MEAL PREP! It’s not easy to stay on track with healthy eating & an overall healthy lifestyle when you’re a working lady or man… trust me, I KNOW! I’ve been there in the past & I’m right back there NOW. But, with a little bit of time, commitment & effort, you can & will stay on track.

THESE MUFFINS ARE A PERFECT FIRST STEP TO DO JUST THAT! Y’all ready for ‘dis? You think you are. But you aren’t. You have no idea what a treat you’re in for with these babies, SERIOUSLY. They are going to throw a freaking BANANA PARTY & A HALF IN YOUR MOUTH. Do banana parties exist? Oh well… even if they don’t, LET’S MAKE ‘EM. How ‘bout that? 

Yesterday morning, I whipped up these quick & simple vegan flourless banana bread muffins…

AND THE SPECIALTY ABOUT THESE BABIES IS THAT THEY ARE MADE WITH JUST YOUR BLENDER. You hardly need to put in any work or effort. Literally. Your sole “effort” consists in adding the ingredients to your blender, pressing a button & pouring the batter into the muffin tin and getting them into the oven. HOW MUCH DO YOU LOVE ME?

They’re so easy that you can literally make them IN THE MORNING, get ready for work & the timer will be beeping like a crazy person before you know it (Your hair and make-up probably won’t be done, let alone your outfit choice, BUT YA KNOW. YOU MAKE DO WITH WHAT YOU CAN. Plus, at least you have a muffin to take with you to work!).

So what’s so good about these muffins?

  • They’re gluten-free, egg-free, dairy-free, sugar-free & oil-free!
  • The batter is ready in just under 5 minutes!
  • They taste like a soft & tender slice of banana bread, only in cute little muffin form!
  • They’re soft & fluffy! Moist & chewy on the inside & just the right amount of crumbly on the outside!
  • They’re the perfect combination of vanilla & cinnamon for natural sweetness & creamy almond butter for nuttiness!
  • They’re so damn good I could’ve eaten the entire bowl of batter… but I didn’t! I swear! (It was really damn hard to resist though!).

Why bananas?

Well, first things first, THEY WERE GOING BAD… TBH.

But, Y’ALL KNOW I EAT FOR BENEFITS… & what’s NOT GOOD about a banana? I mean… NOTHING, right? But what’s good about ‘em? LET ME EXPLAIN!

  • They help lower blood pressure!
  • They’re anti-inflammatory!
  • They may help fight the symptoms of depression & anxiety!
  • It reduces the risk of stroke & certain types of heart disease!
  • They ease digestion, constipation & help improve overall gut health!
  • They may help reduce symptoms of nicotine withdrawal & may help relieve menstrual cramps!
  • They can help fight certain types of cancer!
  • They are an excellent food source for ulcers & stomach acidity!
  • They may help curb sugar cravings, because they’re packed with natural sweetness!
  • They contain antioxidants, vitamins & minerals!
  • Provide an instant boost of energy!
  • Contain tons of potassium!
  • They are bone & nervous system healthy!

My loves, YOU WILL NEED:

  • 1 flax egg (Combine 1 tbsp. of ground flaxseed with 3 tbsp. of water & set aside for about 5-10 minutes);
  • 1/4 cup of creamy almond butter;
  • 2 RIPE AF (Might as well use ‘em, right?) medium/large bananas;
  • 2 tbsp. of pure organic maple syrup (You can also replace with coconut flower syrup, if you’ve got it! It has a very similar texture to that of maple syrup & tastes delicious!);
  • 3/4 cup of gluten-free rolled oats;
  • 1 tsp. of pure organic vanilla extract;
  • 1/2 tsp. of non-GMO baking powder;
  • 1/2 – 3/4 tsp. of Ceylon cinnamon (depending on how much you love your cinnamon!);
  • More cinnamon for topping!
  • OPTIONAL: Throw in an extra 2 tbsp. of ground flaxseed, chia seeds or hemp seeds for added healthy fats & superfood goodness!

NOW, for that HOW-TO:

  • Prepare your flax egg by combining 1 tbsp. of ground flax with 3 tbsp. of water. Mix & set aside for about 5-10 minutes!

  • Preheat your oven to 375F & prepare a muffin pan by either spraying it with some coconut oil cooking spray or lining it with some parchment liners! Set it aside for now.
  • Add all the ingredients to your blender & blend on high until the oats are broken down & the batter is unified, smooth, creamy & silky (& TEMPTING THE F OUT OF YOU!!!). If you don’t have a high-speed blender, you can EVEN mix all the ingredients by hand! You’ll just have to find a way to grind the oats into a flour (perhaps in your food processor, if you’ve got one!) & mash the bananas before combining all the ingredients in a bowl! Once they’re combined, YOU’LL HAVE TO WORK THEM ARMS A BIT (so yes, these muffins won’t be as effortless, BUT THEY’RE SO DANG WORTH IT!);

  • Pour the batter into the prepared muffin pan, filling each tin until it’s about 3/4 full! Don’t overflow it or your muffins will pop out during baking, which honestly, isn’t much of an issue ‘cause they’ll slip right out anyway, BUT YA KNOW. Tots up to you, based on the size you want your muffins to be! Once all the batter has been divided amongst the muffin tin, sprinkle some ‘mo cinnamon on the babes before popping them into the oven!

  • Bake the babes for 15 minutes, until the tops of the muffins are set & a toothpick inserted into the middle comes out clean (ya know, the good old toothpick test!).
  • Allow the muffins to cool in the pan for about 15 minutes before attempting to remove themI MEAN, THAT’S GOING TO BE TOUGH… so like, if you really MUST try them, do it. It’ll get a little mushy & messy, but who the hell cares – they’ll still taste scrumptiously delish… and my goodness… when they are warm… AHHHHH!

  • Once cooled & if you happen to have any leftovers by some miraculous chance, STORE ‘EM in an airtight container for up to one week! I prefer to refrigerate mine & then to warm them up before my devouring sesh, but it’s totally a personal choice!
