IT’S ALMOST THE WEEKEND, not to mention it’s legit Indian Summer in Montreal RN, so my mood level? 100.
There’s a first time for everything, right?!
Yesterday, I made my first attempt at GREEN JUICE & let me tell ya, it was a HECK OF A SUCCESS! And not only is it a success, BUT IT’S A TOTAL POWERHOUSE (& I’ll explain why shortly!).
I’ve been dying to give in to this green juice thing for a while now but never really got around to it & I was honestly kind of skeptical as to what it would taste like, if it would be sweet enough & if I’d be down with it!
AND GUESS WHAT?
It tastes freaking amazingly delicious.
It’s NATURALLY sweet enough.
& I am TOTS DOWN WITH IT.
What’s ALSO great about this juice is that it’s totally doable first thing in the morning (or the night before, if you like to meal prep & plan ahead like me!). All it requires is the ingredients (OBVS), a blender & an airtight Mason jar container for storage!
It’s super easy & I promise there will be no weird pulp or chunky stuff left over! (I don’t know about you guys but there’s something about the texture of pulp in any type of juice that just doesn’t appetite me!).
As I mentioned before, it’s also totally meal-preppable (that’s definitely not a word, but whatever, YOU GUYS KNOW WHAT I MEAN, right?). So, it’s a great thing to incorporate into your weekly meal prep routine to have on hand throughout the week for when you need a little morning or afternoon boost! It packs tons of nutritional benefits & will surely provide you with the fuel you need to get or keep your day going!
SO ABOUT WHY THIS IS A POWERHOUSE?
OKAY, well first, in a nutshell:

NOW, let’s get into a bit more details!
KALE is packed with iron, vitamin A & K, powerful antioxidants, is anti-inflammatory, heart-healthy! It also helps strengthen immune system, lowers cholesterol & may help improve sleep!
SPINACH can help lower cholesterol, is high in niacin, zinc, protein, fibre, vitamins A, C, E & K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper & manganese (I mean… IS THAT NOT ENOUGH?). It can also help regulate blood pressure, is anti-inflammatory, can boost immune system, help maintain a healthy nervous system, help with digestion & is rich in antioxidants!
PARSLEY improves kidney health, soothes indigestion, boosts immune system, helps with digestion, improves bone health, helps purify blood & is ALSO anti-inflammatory!
CUCUMBERS are basically WATER so they keep you hydrated (which is going to be super necessary in the upcoming dry winter months)! They also help flush out toxins, promote healthy & clear skin, are full of vitamins A, B & C & help promote healthy nails & hair! ALL THIS TO SAY, THIS JUICE WILL MAKE YOUR SKIN GLOW!
HONEY CRISP APPLES are crisp, sweet & juicy! They’re packed with fibre so they help you feel full longer & may also help lower cholesterol! They boost immune system, protect the heart, are great for radiant skin, reduce bad cholesterol & high blood pressure & are great for bones & the brain!
LEMONS ARE EVERYTHING. Literally. You can read all about the benefits in my lemon water post HERE, but in a nutshell: promotes hydration, great source of vitamin C, improves skin, supports healthy weight maintenance, freshens your breath, flushes out the liver & toxins, helps prevent kidney stones, boosts immune system, helps with digestion, balances pH levels, boosts energy, helps fight infection, coughs, the common cold & asthma & will basically make you radiant!
GINGER is anti-inflammatory, can help relieve migraines, is great for cold & flu prevention, reduces joint & muscle pain, useful for digestion & cleaning out the colon, great for circulatory problems and stimulates the heart & circulatory systems!
OKAY, SO TELL ME THIS ISN’T A NUTRITIONAL POWERHOUSE & … COME ON. Like seriously. HOW FREAKING AMAZING DOES THIS SOUND?
If you’re sold, THEN LET’S GO!!!!
My loves, YOU WILL NEED:
- 3 cups of fresh kale;
- 3 cups of fresh spinach;
- 3/4 cup of fresh parsley (Replace with mint or basil, if you prefer!)
- 2 small cucumbers;
- 2 honeycrisp apples (I find these are best because they are one of the sweetest kind & will help naturally sweeten the juice without the need to add maple syrup or honey!)
- The juice of 2 organic lemons;
- A few pinches of ground ginger;
- 1.5 cups of water (or coconut water);
- OPTIONAL: If you want a touch of added sweet, add in some raw organic honey, pure organic maple syrup or coconut sugar!
NOW, for that HOW-TO?
- Add all the ingredients to a high-powered blender & BLEND until all the ingredients are fully combined & blended together! You will have to scrape the sides at least once &/or add some more water/coco water if it’s too thick!
- Store in an airtight Mason jar container or bottle & REFRIGERATE!
