Really, Really Chopped Spinach, Broccoli, Avocado & Dried Fig Salad in a Garlicky Balsamic Lemon Dijon Vinaigrette a.k.a. A-True-Babe-Of-A-Salad-Oh-&-Eating-For-Benefits-Always!
<3BACK AGAIN. This time, with tonight’s DINS!
It’s a little bit on the lighter side compared to what I usually eat but I was craving something fresh & crispy & not overly heavy! So I opened my fridge, chilled there for like 5 minutes & THIS BABE OF A RECIPE WAS BORN!
Nothing too crazy.
Nothing too fancy.
BUT DELICIOUS & NUTRITIOUS! And ultimately, that’s really what matters, right?!
So what is it, you ask? JUST A BUNCH OF GREENS?
Well, kind of, BUT just wait until you try it.
There’s just something about the combination of the crispy spinach with the creamy avocado, savoury red onion, naturally sweet figs, crunchy broccoli & THE DRESSING. THE DRESSING. THE DRESSING. Simple as ever, BUT SO PERFECT. The perfect balance between garlic, citrus & savoury-sweet!
ANYWHO, in case you didn’t catch my drift yet, TONIGHT’S DINNER was a REALLY, REALLY CHOPPED Spinach, Broccoli, Avocado & Fig Salad with a Garlicky Balsamic Lemon Dijon Vinaigrette! & LET ME TELL YOU, IT WAS A BABE OF A SALAD!
WHY? LET ME EXPLAIN!
Healthy fats: ✔️

YOUR SALAD (DREAM) COME TRUE: ✔️
So basically EVERY SINGLE ONE OF THE INGREDIENTS IN THIS SALAD IS THERE FOR A REASON. As you guys know, I’m all about research, knowing EXACTLY what is going into my body & eating for beauty & benefits & NOT JUST TO EAT! Overtime, I have really learned to see the value in eating wholesome foods & ingredients that benefit me from within & that provide my body with the proper balance of vitamins, minerals & nutrients! BROCCOLI: Amazing source of vitamin K & C, folic acid & also provides a good dose of potassium, fibre, vitamin C (which, as I’ve said 183789142 times, BUILDS COLLAGEN & is a powerful ANTIOXIDANT that protects the bod from damaging free radicals & oxidative damage!).
RED ONION: Also contains tons of folate, thiamine & calcium, magnesium, potassium, manganese, vitamins C, K & B6!

NOW THAT YOU KNOW ALL OF THAT, I bet you’re wondering how to whip her up, right? LET ME EXPLAIN!
FOR THE DRESSING:
- 2 tbsp. of organic balsamic vinegar (I use Maison Orphée);
- Juice of one organic lemon;
- 1 clove of garlic;
- 1 tbsp. of raw organic apple cider vinegar (from the mother) (I use Bragg’s);
- 1 tsp. of raw organic Dijon mustard (I use Maison Orphée);
- 1/2 tsp. of garlic powder;
- 1/4 tsp. of black pepper;
- Sea salt for seasoning!
- OPTIONAL: 1 tsp. of raw honey (I use Wild Country or Peace River Honey or Richard Paradis & Fils) OR 2 tsp. of pure organic maple syrup (I use Decacer)
FOR THE SALAD:
- 3 HUGE handfuls of spinach, CHOPPED;
- Tons of broccoli florets, CHOPPED;
- 1/2 a red onion, FINELY CHOPPED;
- 1/2 an avocado, FINELY CUBED;
- 1 cucumber, FINELY CUBED;
- 1 dried fig, CUBED;
NOW, TO PUT THIS BABE TOGETHER:
- Prep the dressing: Add all the ingredients to your NutriBullet or blender & PULSE until the ingredients are fully combined, incorporated & emulsified!
- Cut up all your veggies (I know… ANNOYING. BUT WELL WORTH IT!), combine them in a large mixing bowl & pour the DELISH balsamic dressing over them!
- Toss to combine, serve right away & DEVOUR!!
