IT’S THE WEEKEND. And, the weekend is the perf time to meal prep & to get busy in the KITCH. Today is FRIYAY & I started my weekend early. Today’s kitch theme, FOR SOME REASON (NOT SURE WHY!) WAS SPREADS! Not only did I whip this babe up, but I also made two of my other spreads (recipes which are ALREADY on the blog, BTW!). I’m talking my Banana Butter & My Date, Cacao & Mocha spread, BOTH OF WHICH ARE FREAKING DELISH… & well…
This morning’s SITCH IN MAH KITCH?
Homemade FROM SCRATCH (Awesome, right?) APPLE BUTTER!
Made with ONLY:
HONEY CRISP apples (My all-time faves!!!)
Organic apple cider vinegar!
Organic coconut sugar!
The juice of one lemon!
THAT IS ALL!
It doesn’t get more clean, healthy, guilt-free & need I mention, delicious?!
OH & she contains… ZERO REFINED SUGAR, she’s GLUTEN-FREE & VEGAN!
She’s the perfect guilt-free spread to lather all over toast, crackers, rice cakes, sliced fruit OR… DEVOUR BY THE SPOONFUL! NO SHAME!
Wait until you see the texture on this munchkin. SHE WILL WOW YOU, I’M SO SURE. I’M POSITIVE. HECK, I GUARANTEE IT.
NOW, you’re probably wondering, WHY APPLES?
Ladies & gents, I present you with my Homemade Clean-Eating Vegan & Gluten-Free Apple Butter a.k.a. An-Apple-A-Day-Keeps-The-Doc-Away-Oh-&-So-Does-This-Babe-Of-A-Recipe!
Well, for one, I HAD LIKE A MILLION TOO MANY THAT I HAD TO USE UP, so we’re talking pure convenience here.
BUT, APPLES ARE ALSO SO EFFING NUTRITIOUS!
IN A NUTSHELL, apples are extremely rich in important antioxidants, flavonoids & dietary fibre! In fact, the phytonutrients & antioxidants in apples may help reduce the risk of developing cancer, hypertension & heart disease!
But, as you all know, I’M NOT REALLY A NUTSHELL KINDA GIRL. I CAN’T REALLY EVER SHUT UP. Oh well. So, basically, I’m gonna give you a little rundown as to why these babies are so good for you, NOT TO MENTION SO DELICIOUS, SCRUMPTIOUS & JUICY! (But you don’t need an explanation for that last part – JUST A BITE!),
FOR STARTERS (& probs one of the best benefits, let’s be honest here!), thanks to their super-duper high fibre content, apples are CRUCIAL for DIGESTION, DIGESTION, DIGESTION!
In the same vein, one of the most OVERLOOKED parts of our health is the beneficial bacteria living in our gut! Apples help improve the functioning of the bacteria living in the large intestine & can help alter the metabolism within the digestive tract, all while changing the balance of bacteria! Overall, apples can therefore help lead to improved health by maximizing nutrient uptake & eliminating harmful bacteria & toxins!
Their soluble fibre content helps detoxify the bod! (BASIC, but always a good one, right?) & also helps control insulin levels by releasing sugar slowly into the bloodstream!
Due to the combination of the antioxidant compounds & the protein found in apples, these babes can have a major role in preventing overall feelings of weakness & improving muscle tone!
The babes also help lower the level of cholesterol in the body, making it a strong defensive mechanism against cardiovascular disease! The anxiotidant activity in apples reduces the oxidation of fats & neutralizes triglycerides & various fats found between blood vessels in the box, which can exert dangerous pressure!
The babes also contain some amounts of phosphorus, calcium, iron & potassium!
& LAST, but most certainly not least, apples contain large quantities of vitamins A & C! HOWEVER, always make sure to eat apples with the skin in order to get all the nutrients. Many of the nutrients are in the skin or just under it!!
My loves, YOU WILL NEED:
- 3 honey crisp apples, CHOPPED COARSELY;
- 1 cup of organic apple cider vinegar (ALWAYS “FROM THE MOTHER“);
- 1/8 cup of coconut sugar (or brown sugar);
- 1 tsp. of ground cinnamon;
- 1/4 tsp. of ground nutmeg;
- The juice of 1 organic lemon!
NOW, for that HOW-TO?
- First & foremost, CUT YOUR APPLES UP INTO COARSE CHOPS & CHUNKS.
- Add the apples, apple cider, coconut sugar, cinnamon, nutmeg & the juice of 1 lemon to a rolling boil in a saucepan over HIGH heat!
- Once boiled, cover, leaving the lid slightly ajar & boil for 15-20 minutes, or UNTIL THE APPLES ARE TENDER & MOST OF THE LIQUID HAS EVAPORATED. Check on it & stir every 5 minutes!
- Once cooked through, let the apples cool off for a bit & then add the apple mix to your blender or food processor! BLEND THE F OUT OF ‘EM UNTIL SMOOTH!!
- Spoon the apple butter into an airtight container & refrigerate up to one (1) week!
