I am legit DEAD from the move, but… I’m Kelly in the KITCH. Like hello?!? And so, despite my being freaking exhausted this morning, before getting back to the unpacking, I JUST HAD TO whip up a dressing storm!!!! (It’s been a few days & I needed to have a beautifully-delicious-rich-&-creamy dressing ready in my fridge for the weekend given how on-the-go & cray-cray my weekend of unpacking is looking!).
This babe came to mind when I got into bed last night… Ooopsie! Then, I dreamt about her!
And NOW, HERE I AM, STARING AT THIS BEAUTIFUL FREAKING BABE THAT I BROUGHT TO LIFE!! SHE IS NO LONGER JUST A DREAM, but rather… A DREAM COME TRUE.
Not exaggerating. For once.
Munchkins, this is my Tomato, FETA & Oregano dressing!!!!!!! WOAH, just woah.
If you’re a fan of feta cheese & tomatoes… basically, if you’re Greek or are a fan of GREEK SALAD, this babe is for YOU!
And if you’re not, TRY HER ANYWAY! She will change that. I SWEAR.
P.S. Is it weird that I tasted dressing at 6:45 am? PLEASE SAY NO.
IN A NUTSHELL, this baby is:
SAVOURY (with just the right amount & punch of NATURAL SWEETNESS. Uh, hello pure organic maple syrup!!!)
Packed with loads of vitamins (ESPECIALLY VITAMIN A) & nutrients!
Clean & healthy!
and SUPER-DUPER VERSATILE! Basically, I give you two options: You can whip her up as a dressing OR you can thicken her up & whip her up as a dip or sauce! You choose, munchkins! The only thing that changes in the recipe is if you decide to use her as a dip or spread, you just gotta throw in more feta… Is that a bad thing? NAH. Didn’t think so.
Ladies & gents, this is my Clean-Eating Cherry Tomato, Feta & Oregano Dressing a.k.a. Hello Creaminess. Hello Cheesiness. Hello Gorgeousness. Hello Deliciousness. OH YOU HAD ME AT THE FIRST HELLO!
Before we get into the nitty-gritty… it’s your lucky day munchkins, I won’t have time to rant for too long, BUT, there is one thing I NEED to share with you!
FETA. FETA. FETA. She’s delicious, BUT IS SHE GOOD FOR YOU? What’s the verdict, you ask? Let me explain! Okay, so in a nutshell, cheese is obvs a delicious & savory addition that goes well added to pretty much ANY DISH. BUT, with the rise in popularity of processed dairy, it has become ONE THING that many people avoid when sticking to a healthy diet…
HOWEVER, what if I MADE YOUR DAY & told you that you didn’t have to completely eliminate cheese & that feta is ACTUALLY the healthiest cheese out there?
Basically, feta is made from sheep or goat milk (often combined) & is a NUTRIENT-RICH option for getting the flavor you are looking for, WITHOUT THE GUILT. It’s easier to digest & MUCH LESS ALLERGENIC & INFLAMMATORY than cheeses made from cow’s milk! (A.k.a. if you are sensitive to dairy, GO FOR ‘DAT FETA!).
OF COURSE, like ALL food products, feta is better raw… in other words, if you can, avoid feta made from pasteurized milk products!
ALL THIS TO SAY, NO, I AM NOT TELLING YOU TO EAT FETA EVERY SINGLE DAY… (This is my disclaimer!!!). I do acknowledge it’s still cheese & it is definitely high in sodium, SO USE IT IN MODERATION. But, when that cheese craving hits, KNOW THAT OPTING FOR FETA, AND, ERGO, THIS FREAKING HEAVENLY DRESSING, IS YOUR BEST BET!
LASTLY, there are a few benefits that feta offers that are actually worth a little mention (I promise, A “LITTLE” MENTION!).
CANCER-PROTECTIVE EFFECTS: Given that feta is a very rich source of calcium, research has indicated that (combined with vitamin D), it may help protect the body against various types of cancer! NOT ONLY THAT, but also the protein alpha-lactalbumin found in feta, when bound to calcium & zinc ions, has been suggested to have antibacterial & antitumor properties. AWESOME, right?
Feta cheese actually supports bone health. Of course, we all know that calcium is good for the bones! (GOT MILK?). However… what some of us don’t know (but now you know!), milk can actually hurt our bones, as pasteurized cow’s milk is one of the worst places to get the most calcium due to its habit of causing acidosis (a high level of ACID in the bod). Instead, we should aim to opt for OTHER high-calcium foods, like FETA!
Ergo: GOAT’S MILK > COW’S MILK.
Feta can help boost your IMMUNE SYSTEM. How so? Another protein found in feta is called HISTIDINE. This protein, when combined with vitamin B6 (which BTW, IS ALSO FOUND IN FETA), undergoes a molecular process to become histamine, which is a compound part of the inflammatory process. Now, yes, we all aim to remove foods that cause inflammation from our diets, BUT, research has indicated that a small degree of inflammation is actually NECESSARY AS IT IS WHAT ALLOWS OUR IMMUNE SYSTEM TO FIGHT DISEASE! All this to say, consuming foods like feta on occasion, combined with a diet high in ANTIOXIDANTS to protect from damage of excess inflammation can ensure the development of a HEALTHY IMMUNE SYSTEM!
FETA CHEESE = PROBIOTICS = HELLO HEALTHY IMMUNE SYSTEM = HELLO HEALTHY GUT = BUH-BYE INFECTION & DISEASE = WINNING.
Probiotics are the bacteria that line your gut. WHEN THEY GO CRAY-CRAY, your body becomes a breeding ground for bacteria, yeast, fungi, parasites & other gross things. EW, right? Not only are probiotics immunity boosters, BUT THEY ALSO ALLOW YOU TO MAINTAIN A HEALTHY GUT & avoid many digestive problems common in HIGH-STRESS lifestyles, especially if you consume a lot of GMOs, sugar & are exposed to antibiotics and other dangerous chemicals. Probiotics, ftw!
Are you one of those munchkins who like ALWAYS HAS A MIGRAINE? If so, I hope you’ve got some feta in your fridge. IN FACT, RESARCH HAS INDICATED THAT FETA PREVENTS HEADACHES GIVEN ITS VITAMIN B2 CONTENT. Basically, feta is a natural remedy for this way-too-common-issue!
FETA > ADVIL. BYE!
And last, but most certainly not least, feta can actually help naturally treat anemia! Anemia is often associated with low levels of iron, folic acid or vitamin B12, all of which are found in feta cheese! Soooo…. LOAD UP!
OKAY babies, that rant went on longer than expected (But don’t act surprised… when does it not? Right?) Anywho, I’m finally done! & READY TO REVEAL HOW TO MAKE THIS BABY. You ready for this? Yes. Yes. You are! You’ve been waiting a while now. Sorry!!!!!
My loves, YOU WILL NEED:
- ½ cup of cubed or crumbled feta cheese;
- If you prefer to use this baby as a veggie dip or spread as opposed to a dressing, do ¾ cup of feta cheese to thicken her up & create a more dip-like texture!
- 2 tbsp. of organic white wine vinegar;
- 2 tbsp. of pure organic maple syrup;
- ¼ cup of organic extra-virgin olive oil;
- 1 pint of cherry tomatoes;
- 1 tbsp. of dried oregano;
- ½ tsp. of organic Himalayan pink sea salt;
- Freshly ground black pepper for seasoning!
SIMPLEST. “COMING-TOGETHER”. EVER. Y’ALL READY?
- Simply combine all these gorg ingredients in a food processor or blender (I used my Breville Boss blender) & BLEND/PULSE until a beautiful smooth & creamy (need I mention, CHEEEEESY) dressing consistency is obtained!
- P.S. If you want a bit of a spicy-ish dressing, throw in some red pepper chili flakes OR ½ tsp. of Sriracha or garlic chili paste PRE-BLEND!
- Taste the babe! & Adjust seasonings if necessary (a.k.a. add some ‘mo salt or pepper!).
- NOW… DEVOUR!
