I hope you all had a beautiful Tuesday! THE SUN WAS FINALLY OUT IN MONTREAL, WOOT WOOT! But, even though the sun was out & you munchkins probably don’t need any day-brightening, I AM STILL HERE TO BRIGHTEN YOUR DAY WITH NONE OTHER THAN TODAY’S LUNCH GOALS. Another day, another salad… but not just any salad!!!
My loves, this is my play on TURKEY WALDORF SALAD. WTF, WOAH. WHAT DID I JUST CREATE THOUGH? PROTEIN PACKED PERFECTION? YEP! YOU?
THINK: Ground turkey (OBVS!!!). Chopped-AF spinach. Thinly-sliced sweet pears. Chopped fresh celery. LOADS OF PECANS. I’m talking PECANS FOR DAYS, babies & a BEAUTIFUL HONEY VINAIGRETTE (Don’t think I have to tell you munchkins, BUT JUST IN CASE, KNOW THAT SHE IS HOMEMADE!).
Ladies & gents, this is Kelly’s (Delicious) Play on Turkey Waldorf Salad a.k.a. Protein-Packed-Perfection-Drenched-in-the-Sweetest-&-Tangiest-AF-Honey-Vinaigrette-That-You-Ever-Did-Taste,
I just wanna brag for like two minutes about the wonderfulness of this babe, then I promise, I will tell you how to (so simply) put her together!!! LITERALLY, IN MINUTES. NOT JOKING. WOAH.
OK, IT MIGHT NOT TAKE TWO MINUTES, BUT IT’LL BE WORTH IT. Guess what time it is babies? YES, YES. NUTRITION-101 WITH KELLY IN THE KITCH & TODAY, we talk about NONE OTHER THAN PECANS!! I bet you thought these (delish) babes were just another one of those fatty nuts that you like essentially deemed “off-limits“. I’m right, eh? WELL, WAIT UNTIL YOU HEAR ABOUT THEIR BENEFITS. You’ll be reincorporating these babies into your daily life STAT. PRONTO. NOW. Here we go!!
THE BABES contain more than 19 vitamins and minerals including:
ellagic acid, vitamins A and E (UH, BUH-BYE WRINKLES! These antioxidants actually FIGHT & ELIMINATE FREE RADICALS, responsible for causing premature skin aging!!!! Therefore, pecans can actually prevent the occurrence of signs of aging, such as fine lines, wrinkles & pigmentation! WTF?!)

Who would’ve thought a NUT could do all of this? I MEAN… pecans are CUTE & ALL, but… THE FACT THAT THEY CONTAIN ALL THESE BENEFITS JUST TAKES ME TO ANOTHER PLACE (I THINK IT’S CALLED PECAN HEAVEN, BUT I’LL DOUBLE CHECK & GET BACK TO YA!).
OKAY, MUNCHKINS, since the salad is NOT ONLY made up of pecans, I guess it’s time for me to tell you how to whip this baby up. I mean, NOW YOU’RE STARVING & DYING TO SCARF DOWN SOME PECANS. So, LET’S GO!!!!
FOR THE SALAD:
- 2 cups of shredded ground turkey
- 220g of spinach, CHOPPED-AF;
- 1 medium pear, THINLY SLICED;
- 3-4 stalks of celery, CHOPPED;
- ½ cup of organic pecans;
UH, so I think this is the shortest ingredients list I have ever had for a salad. BUT WOAH. Again, another PERFECT-EPITOME-EXAMPLE OF why sometimes, simpler is BETTER! You’ll see what I mean when you take your first bite… HEAVENLY, BABIES, HEAVENLY. Trust in me, kay?
FOR THE SWEET & TANGY HONEY DRESSING:
P.S. This isn’t one of those super thick & sweet dipping type dressings that everyone seems to associate a honey salad dressing with. This is a crisp and tangy light vinaigrette with just the right amount of sweet honey flavour. AND THROWING THIS BABE TOGETHER IS LEGIT A BREEZE!
- 1/3 cup organic white balsamic vinegar;
- 2/3 cup of organic extra-virgin olive oil;
- 2 tbsp. of raw organic honey;
- 1 tablespoon Dijon mustard;
- 2 tbsp. of fresh lemon juice;
- ¼ tsp. of smoked paprika;
- 1 tsp. of dried minced onion (If you don’t have, substitute this with onion powder or garlic powder! DO NOT PANIC. THE DRESSING WILL STILL BE DELISH!!!);
- 1/2 tsp. of organic Himalayan pink sea salt;
- 1/2 tsp. of freshly ground black pepper.
OKAY lovies, now that you’ve got all your ingredients DOWN-PACKED, let me tell you how to whip this baby up & this is one of those rare times in Kelly in the Kitch’s blogging life, YOU DO NOT NEED A STEP-BY-STEP!!!!
IN A LARGE bowl, gently toss the turkey, spinach, pears & celery until combined!
In a SMALL bowl, whisk together the yummy dressing ingredients until COMBINED-AF & DRESSING CONSISTENCY IS OBTAINED!
NOW POUR THE BEAUTIFUL SWEET & TANGY HONEY VINAIGRETTE ALL OVER YOUR GORG TURKEY & VEG MIXTURE & SMOTHER/DRENCH/COVER/LATHER IT UNTIL ALL THE BEAUTIFULNESS IS EVENLY COATED!
YEP, THAT’S IT BABIES. TIME TO DIG IN. DEVOUR!!!!!!!!
