Gooooood Wednesday afternoon! 🙂 HALFWAY THROUGH THE WEEK & WE STILL ALIVE. WE KILLIN’ IT! I bet my delish recipes have played a substantial role in keeping you munchkins motivated to get through another day… YA KNOW, knowing that I’m going to be sharing all this yumminess to fill your tummies with must be quite motivating when debating whether or not to get out of bed in the morning. THE ANSWER IS ALWAYS YES. GET OUT OF BED. PRODUCTIVITY, ALWAYS.
Checked in with you babies on insta at 6:20am, WADDUP? And… THE SITCH IN MY KITCH WAS… CUCUMBER QUINOA SALAD IN A LEMONY-MAPLE ITALIAN VINAIGRETTE!!! Let me tell you, this was QUITE THE SITCH (A VERY REFRESHING ONE, to say the least!!!).
Basically, this babe is like the EASIEST quinoa salad you will ever make. BUT… SHE’S ALSO A LOVE AT FIRST BITE SITCH. You won’t believe me when I tell you how simple the ingredients are, NOR when I tell you how freaking quick I whipped this babe up!
THINK: Perfectly-cooked quinoa, LOADS & LOADS of chopped-AF cucumber, crunchy celery, savoury red onion & fresh dill & mint. Oui, c’est tout!!!! OH, right, the vinaigrette… GUYS, THE CITRUS + THE MAPLE SYRUP = LOVE <3. WOAH. Yep, I guess you could say I’m in LOVE. I’ve had this baby up my sleeve for a while now & today, I finally decided it was time to share her with you babies!
LADIES & GENTS, this is my Clean-AF Cucumber Quinoa & Mint Salad Tossed in a Sweet & Tangy Lemony-Maple Vinaigrette a.k.a. That-Protein-&-Nutrient-Packed-Green-Rainbow-That-Will-Turn-Your-Face-Into-A-Happy-Face-ALWAYS!
In a nutshell, she’s LIFE. OKAY, OKAY, FINE. I’ll give you a bit more details. We all know how much I LOVE DEETS.
FRESH TO DEATH!
DELICIOUS & FILLING! (LIKE ALL SALADS SHOULD BE!!!)
FABULOUSLY FLAVOURFUL (But, don’t you just LOVE A FAB SALAD? They’re so fierce. I can’t even!!!!).
OH & if all these beautz adjectives don’t have you munchkins convinced yet, let me tell you that this baby is PACKED WITH PROTEIN. Thanks quinoa, you are freaking awesome, not to mention so deliciously-delicious. Two birds. One stone. Ya know. BYE! NO, but wait. I didn’t give you the PROTEIN-PACKED DEETS. So NO, not bye. HI! Each serving of this baby rings in at a whopping 12 grams of protein. I’M NOT BREATHING. Like… DID YOU MUNCHKINS KNOW QUINOA WAS THIS PROTEIN-RICH? ‘Cause I didn’t. BUT NOW I DO & I’M A FREAKING HAPPY CAMPER.
BTW, I’m sowwy I didn’t this babe, oops I mean, salad, to you earlier & I genuinely do hope you found something else just as yummy to whip up for lunch today. BUT, THE GOOD NEWS IS… YOU WILL BE ABLE TO WHIP THIS BABY UP TONIGHT & HAVE HER TOMORROW. I THINK THAT’S PRETTY FAIR, NO? OKAY, rant over. Kidding. Rant is never over.
BEFORE WE GET INTO THE NITTY-GRITTY, I just want to tell you munchkins why this babe is so healthy AND AWESOME! I promise, it will be quick! Okay? You ready?
QUINOA = PROTEIN. Quinoa is the PERF balancer… WHAT DO I MEAN? Basically, she’s your answer to getting protein-packed meals, WITHOUT HAVING TO GO THE EXTRA MILE TO COOK CHICKEN/FISH OR MEAT! In other words, this salad is the perfect dins for those “I need my protein fix BUT I have no desire to spend an hour in the KITCH” nights.
BTW, not only is she protein-rich, but she also contains TONS OF MINERALS & B VITAMINS AND CONTAINS ALMOST TWICE AS MUCH FIBRE AS MOST OTHER GRAINS! Winning!!!!!
She’s a freaking veggie rainbow! I don’t know about you munchkins but I LOVE A GOOD VEGGIE RAINBOW. Especially, when you can create a veggie rainbow with uhhh…like 4 or 5 ingredients: cucumbers, red onion, herbs for days & celery (NOW that I think about it, it’s really not that much of a rainbow. It’s more of a RAINBOW OF GREENS. But are you complaining? CAUSE I’M CERTAINLY NOT!!! I LOVE MAH GREENS. EAT YO GREENS, OKAY?)
This babe is GLUTEN-FREE & VEGAN!
CHEESE potential. THIS BABE HAS SERIOUS CHEESE POTENTIAL. Because honestly, there are times when you just can’t say no to those little fresh cubes of FETA!!!! (OR LOADS OF NUTRITIONAL YEAST!!!!! VEGAN FTW).
THIS BABE WILL LEGIT REDUCE STRESS. Kay, you probs think I’m mental. How can a quinoa salad reduce stress? LET ME EXPLAIN. To make this salad, you’ll have to lift approximately three fingers for about five seconds. Get your ZEN FACE on! Time to kick stressful chopping/mincing/crazy-time-consuming salad-making to the curb.
AND BEST NEWS EVER?!?!?!
THIS BABY WILL TURN YOUR FACE INTO A HAPPY FACE!!!! You know those days when everything is going NOT right and you remember your most awesome lunch waiting for you in the fridge and you suddenly get a rush of happy brain chemicals? That’s this salad. Happy = healthy.
AND LAST BUT NOT LEAST!!! Babes, you can add or swap just about ANYTHING to this summer salad & it will still be F-AMAZING. You can trust me, because I’ve added literally every possible thing that I could have ever found in the fridge… I’m talking feta, sliced almonds, raisins, cranberries, pecans, and goat cheese… I could go on for days. Basically, with a simple simple, simple base of cucumber, fresh herbs & quinoa, there is NADA YOU CANNOT DO.
OK, OK FINALLY. TIME FOR THEM INGREDIENTS!!!!!
My loves, YOU WILL NEED:
FOR THE SALAD
- 2 cups of chilled cooked organic quinoa (MUNCHKINS, IT’S CRUCIAL THAT YOUR QUINOA IS CHILLED/COOLED OFF before you combine it with your veggies, unless you want all your beautiful green-AF FRESHNESS to wilt & turn soggy. Ew. BYE!);
- 1 English cucumber, DICED-AF;
- 3 celery stalks, CHOPPED;
- ½ cup of red onion, DICED;
- ½ cup of mint, ROUGHLY CHOPPED;
- ½ cup of dill, ROUGHLY CHOPPED;
- 1 batch of my homemade Lemony-Maple Italian vinaigrette!!!!
FOR THE DRESSING (a.k.a. ‘DAT LEMONY-MAPLE ITALIAN VINAIGRETTE REFERRED TO ABOVE!!!)
- ¼ cup of organic extra-virgin olive oil;
- 2 tbsp. of organic apple cider vinegar;
- 1 tbsp. of Vegan mayo!
- 2 tbsp. of fresh lemon juice;
- 1 tbsp. of pure organic maple syrup
- 1 tsp. of Italian seasoning;
- ¼ tsp. of freshly ground black pepper;
- pinch of organic Himalayan sea salt;
& NOW, TO WHIP THE BABE UP... IT COULD NOT BE SIMPLER. I COULD NOT HAVE MADE YOUR LIFE EASIER. I’M FREAKING AWESOME. OH RIGHT, I’M SUPERWOMAN.
- TO MAKE THE QUINOA
- Cook your quinoa according to the package directions!!!!
- Once cooked, set the quinoa aside to cool off!
- TO MAKE THE VINAIGRETTE: Whisk all the sweet, tangy & savoury ingredients in a small bowl until COMBINED-AF. Basically, until dressing consistency is obtained and you are DYING TO POUR HER ALL OVER YOUR QUINOA!
- TO MAKE THE SALAD: Toss all the beautiful-AF ingredients together UNTIL COMBINED (AS DISCUSSED, DO NOT PUT THE QUINOA IN THE BOWL JUST YET!)
- SATISFY YOUR NEEDS & POUR THE BEAUTIFUL VINAIGRETTE ALL OVER THE QUINOA & VEGGIE MIXTURE, TOSS THE EFF OUT OF THE MIXTURE TO COMBINE & MAKE SURE ALL YOUR VEGGIES & QUINOA ARE COATED EVENLY.
- Now… DEVOUR!!!!!!
