Cheers to the freakin’ weekend, right? I know. We all know what weekends are for… SPENDING TIME IN THE KITCH WITH KELLY’S RECIPES. DUH! Admit it, it’s on your TO-DO LIST & if it isn’t, ADD IT STAT. I don’t mean to be selfish or anything, I just want you munchkins to nourish yourselves with yummy & healthy food. So, please, forgive me if I come off as selfish. IT IS NOT MY INTENTION, okay
Anywho, CURRENT SITCH IN KELLY’S KITCH at 6:03am, waddup?: What to do when you have SUPER-DUPER-ÜBER RIPE MANGOES that are about to go bad? YOU SAVE THEIR LIVES & WHIP UP SOME HOMEMADE EASY-AF MANGO SALSA! 👌🏻 Ya dig? My loves, this baby is HEAVENLY. 😇😇😇😇 All I can say (because once again, I’ve been rendered absolutely-positively speechless) is dream of the combination of tangy & citrusy lime juice combined with that of sweet, juicy ripe mangoes… then throw in some chopped red onion, bell peppers, LOADS of garlic, chopped-AF FRESH MINT, DILL & CILANTRO, oh, & an array of spices (obvs!!!) guaranteed to take you to CLOUD 9!!!!
Ladies & gents, I present you with my Kelly’s Clean-Eating Simple-AF Mangolicious Salsa a.k.a. In-Mexico-On-A-Cloud-&-Never-Coming-Home-Oh-&-Beautiful-Rainbow-Salsa-FTW!!!! GUARANTEED TO MAKE YOU THE HAPPIEST PERSON EVER. LEGIT!
OKAY, so I don’t want to keep you munchkins waiting for TOO LONG… I’ve already ranted quite a bit this morning & there’s
A BIT MORE, A LOT MORE where that came from!!! SO HERE GOES!!!
My loves, YOU WILL NEED:
- 2 ripe mangoes, PEELED, PITTED & DICED (YOU SO PRETTY & MUSHY & SWEET & YUMMY & I LOVE YOU!);
- 1 small red onion, PEELED & DICED;
- 1 bell pepper, DICED;
- 2 cloves of garlic, MINCED;
- ¼ cup of fresh cilantro;
- ¼ cup of fresh mint, CHOPPED;
- 3 tbsp. of dill, CHOPPED;
- OPTIONAL: 1-2 jalapenos, SEEDED & DICED;
- 2 tbsp. of organic extra-virgin olive oil;
- 3-4 tbsp. of fresh lime juice;
- 1 tsp. of garlic powder;
- ¼ tsp. of chipotle chilli powder;
- ¼ – ½ tsp. of ground cumin;
- ½ tsp. of dried parsley flakes;
- ½ tsp. of any other dried herbs of your choosing (I used some dried oregano & dried basil!);
- ¼ tsp. of freshly ground black pepper;
- Organic Himalayan pink sea salt for seasoning;
OKAY lovies, TELL ME YOU’VE SEEN A RECIPE WITH CLEANER INGREDIENTS & I MIGHT JUST HAVE TO KILL YOU. Seriously though, just at the sight of these beautiful fresh ingredients, I’m melting. Imagine how I felt when I was in the midst of combining all this beautifulness. I legit needed one of you by my side. Like, it was bad. REAL BAD. The temptation was killing me. I wanted to devour her on the spot, BUT I COULDN’T. I HAD TO FINISH PUTTING THE RECIPE TOGETHER & MOST OF ALL, she had to remain PRETTY-AF so I could photograph her & share her with all you munchkins. And so I resisted. And so she remained RATHER PRETTY & well, here I am, typing away frantically to get her to you!
OH, & can we ALSO discuss how this babe is:
OKAY, SO NOW that you’ve essentially broken your poor little arm with all the peeling, pitting, seeding, mincing & dicing I made you do, I THINK IT’S ONLY FAIR IF I ATTACK THAT NITTY-GRITTY STAT. I mean… BREAKING YOUR ARM & KEEPING YOU WAITING, that would be lethal. I’m not THAT mean. So, let’s get right to it, munchkins!
OKAY, basically, all you need is a bowl. I’m not even kidding. No step-by-step for this baby either (Admit you’re loving me these days!!!). All you have to do is toss all these beautiful-AF-rainbow-ingredients in a metal mixing bowl until combined. TASTE (Best. Freaking. Part. Right?) & ADJUST THE SEASONINGS (If necessary).
SERVE HER RIGHT AWAY (OH & DEVOUR!!!) or REFRIGERATE HER FOR UP TO 3-4 DAYS. But I mean… SOWWY TO BURST YOUR BUBBLE, BUT, you’re not getting to the refrigerating step. I don’t mean to be pessimistic or anything, but like, let’s be realistic here, WHO IN THEIR RIGHT MIND WHIPS SOMETHING THIS BEAUTIFUL UP & IS ABLE TO RESIST DEVOURING IT RIGHT AWAY? I don’t know about you but I don’t know ANYONE, & I MEAN, ANYONE who could do that. Do you? If so, please introduce me. Perhaps they could help with my self-control issues.
OH, right, in case you need some suggestions on how or with what to serve this baby… OBV SHE’S SIMPLY FANTASTIC WITH JUST TORTILLA CHIPS. BUT, you all know I like to let my creativity in the kitch shine & so… let me tell you that this baby is also MAGNIFICIENT ON GRILLED FISH (OR IN FISH TACOS, ZOMFG!!!), CHICKEN OR BEEF or EVEN TOSSED WITH SOME LETTUCE & A BEAUTIFUL VINAIGRETTE (Try one of mine. I gave you so many options. WHAT ARE YOU WAITING FOR?) to make a fruity-AF green salad. Basically… There is no going wrong with this one!!! You’ve legit hit a home run. Well, rather, I have. Then, I shared ‘dat home run with you. Ya dig?
