Rise & shine! This morning, AFTER I WOKE YOU WITH THEM EYE MASKS, I now wake you WITH A SECOND ATTEMPT, ergo, my HOMEMADE BLUEBERRY BALSAMIC VINAIGRETTE. Sweet & tangy, made with ONLY THE CLEANEST & HEALTHIEST INGREDIENTS, oh & of course, fresh blueberries (OBVS!), this baby will make you forget all about ‘dat bottled stuff & will BRIGHTEN ANY SALAD, literally!!!!

Ladies & gents, I present you with Kelly’s Clean-Eating Simple-AF Blueberry Balsamic Vinaigrette a.k.a. Sweet-&-Tangy-Wonderfulness-Smothered-All-Over-Your-Face-Oops-I-Mean-Salad-Oh-&-Blueberries-Always!

Basically, I had some cute little blueberries that were starting to get a little smushy & squishy in the fridge & thought… WHAT BETTER WAY THAN TO THROW THESE BABES INTO A BLENDER WITH A FEW OTHER CLEAN INGREDIENTS to whip up this super simple, SUPER YUMMY, salad dressing that has just the right amount of sweet & tangy?!

Oh & for those of you who live in Montreal, this dressing will GIVE YOU A LITTLE TASTE OF SPRING/SUMMER, since unfortunately Mother Nature has not been giving us that & IT’S ALMOST MID-MAY, da fuq?

UHHH, sorry not sorry, BUT, I must, I mean, I MUST, tell you munchkins about some of the main benefits of none other than these cute little munchkins we like to call BLUEBERRIES! YOU READY? It’s that time. NUTRITION-101 WITH KELLY IN THE KITCH, but I promise, it’ll be quick! Here goes:

BLUEBERRIES ARE A SUPERFOOD. Let me tell you why.

They are the MOST NUTRIENT-DENSE BERRIES. Basically, one serving will provide you with a whopping 4 GRAMS OF FIBRE, 24% of the RDA of Vitamin C, 36% of the RDA of Vitamin K & 25% of the RDA of Manganese. Oh & they’re so yummy, you won’t even be thinking about the nutrients!!!

My loves, YOU WILL NEED:

  • ½ cup of blueberries (If you’ve got some mushy ones in your fridge that you’re not sure what to do with, EXCEPT THROW IN THE GARBAGE, then this dressing is YOUR ANSWER, lovies!);
  • ½ cup of organic balsamic vinegar;
  • 2 tbsp. of raw organic honey or pure organic maple syrup (YUMMMMMY IN MY TUMMMMMY!);
  • 1 tbsp. of organic yellow mustard (Munchkins, if you prefer Dijon, go ahead!);
  • 1 tbsp. of organic apple cider vinegar;
  • ½ cup of organic extra-virgin olive oil;
  • 2 cloves of garlic, MINCED;
  • Organic Himalayan pink sea salt & freshly ground black peppa!

Yes, babies! That’s it, that’s all!!! Told you the ingredients were simple, clean & healthy. Betcha didn’t think they were THIS simple, clean & healthy, right? WELL, NOW YOU KNOW & YOU LOVE ME EVEN MORE, right?

Now, if you thought the ingredients list was simple… wait until I tell you how simple she is to whip up. YOU READY FOR ‘DIS? No need for a step-by-step, lovies! All you gotta do is combine the ingredients in a blender or food processor & PULSE THE EFF OUT OF ‘EM UNTIL ‘DAT SMOOTH DRESSING CONSISTENCY IS OBTAINED. Once desired texture is obtained, taste & adjust seasoning (if necessary) et voilà! NOW, POUR & DEVOUR!
