I’m back, YET AGAIN. This time, with tonight’s DINNER GOALS. How gorgeous is she?! Honestly, I whipped her up in like less than 20 (when I say 20, I’m referring to minutes, BTW!) & LEGIT, LOVE AT FIRST BITE. BASICALLY, at your first bite, YOU WILL MELT & based on how freaking delish she is, you would think I was a nonna who spent all day in the kitch whipping this baby up for her grandchildren. That statement is half true. I DID WHIP THIS BABY UP ON MY OWN. BUT, I CAN CONFIRM THAT I AM NOT A NONNA, I DID NOT SPEND THE ENTIRE DAY IN THE KITCH TO DO SO & I DO NOT HAVE GRANDCHILDREN (Not yet anyway…). ANYWHO.

Ladies & gents, I present you with Kelly’s Gluten-Free Rosé Primavera with Garlic-Sautéed Mock Crab, Oven-Roasted Eggplant & Mushrooms a.k.a. Clean-Eating-Healthy-AF-Authentic-Italian-Comfort-Food-NONNA-STYLE.

Basically, THINK: Gluten-free spaghetti. Extra-virgin olive oil. Garlic FOR DAYS. Sweet white onion. MY FAMOUS AF OVEN-ROASTED EGGPLANT. Mock crab FOR DAYS. Organic strained tomatoes. CHEDDAR CHEEEESE/Nutritional yeast (OBVS!!!). Almond milk. Greek Yogurt. Fresh parsley & cilantro & LOADS of spices OBVS. GAHHHH, SO YUMMY!







Full of protein, fibre & nutritious greens & veggies!

Contains just the right amount of savouriness to go with the YUMMMMMMY AF tomato sauce!

Oh & when I was talking protein, I totally meant to tell you munchkins that SHE PACKS A WHOLE 24 GRAMS OF PROTEIN & I’LL JUST THROW IN THE FACT THAT SHE ALSO PACKS 20 GRAMS OF FIBRE. OK, again, you’re PRETTTTY MUCH winning at life with this one. Ya dig?

IF YA DIG, let’s get to the ingredients. IF NOT, well close the tab (BUT I HATE YOU IF YOU DO. Kidding! I totz understand you might just not be into this recipe… wait no, I don’t understand. BUT WHATEVER FLOATS YOUR BOAT, HONEY!). OK, ingredients. Here goes!!

My loves, YOU WILL NEED:

  • Your fave gluten-free (OR NOT, totz. up to you!) spaghetti, COOKED AL DENTÉ!
  • 2 tbsp. of organic extra-virgin olive oil;
  • 2-3 cloves of garlic, MINCED;
  • 1 large sweet white onion, CHOPPED FINELY;
  • 200g of white mushrooms, SLICED;
  • 200g of my Oven-Roasted Eggplant (RECIPE HERE);
  • 250g of mock crab, CHOPPED;
  • 1 cup of organic strained tomatoes;
  • 1 tsp. of garlic powder;
  • 1 tsp. of onion powder;
  • 1 tsp. of all-purpose or Italian seasoning;
  • ½ tsp. of dried basil;
  • ½ tsp. of dried parsley flakes;
  • ½ tsp. of smoked paprika;
  • ¼ tsp. of freshly ground black pepper;
  • Organic Himalayan pink sea salt for seasoning;
  • ¼ cup of shredded cheddar cheese or nutritional yeast/OR BOTH!!!;
  • ½ cup of unsweetened organic almond milk (I use Earth’s Own!) or regular/skim milk (if you ain’t a fan of all that plant-based stuff, ya know!);
  • ½ cup of 2% plain Greek yogurt;
  • ¼ cup of fresh parsley, ROUGHLY CHOPPED;
  • ¼ cup of water (& more, as necessary!);
  • 2-3 tbsp. of fresh cilantro, CHOPPED, for garnish;
  • OPTIONAL: Dried parsley & red pepper chilli flakes for garnish! OH & SOME ‘MO CHEESE OF YOUR CHOOSING/NUTRITIONAL YEAST/BOTH!!!

HONESTLY, IT DOESN’T GET CLEANER THAN THIS. SERIOUSLY, THOUGH. Admit this is the healthiest & cleanest ROSÉ primavera that you ever did see… If you say no, YOU’RE TOTZ LYING or you’ve tried some way-too-healthy primavera that didn’t even taste good, right? Well, my loves, let me break it down for you – THIS ONE IS PROBABLY JUST AS CLEAN & HEALTHY (if not more), YET YOU FEEL LIKE YOU’RE EATING A BOWL OF AUTHENTIC ITALIAN COMFORT FOOD (NONNA-STYLE, NO JOKE!).

Okay, even though I ain’t a nonna, I still got some skill. I mean, I did whip this baby up after all. NOW IT’S TIME FOR ME TO REGURGITATE THE RECIPE FOR YOU MUNCHKINS. ARE YOU READY FOR THIS? Here we go, babies!!

  • OKAY, for starters, boil your spaghetti (or whatever other pasta your wild imagination decided to use!) according to the package directions. Honestly, if your package tells you munchkins to boil your noodles ANY OTHER WAY THAN AL DENTÉ, well… 1) DO NOT, I repeat, DO NOT, follow the package instructions & 2) NEVER BUY THAT BRAND AGAIN. Oh & 3) PROCEED TO BOIL YOUR PASTA UNTIL IT IS AL DENTÉ, OK?
  • Once boiled, strain your noodles & run them through some cold water to stop the cooking process! Set aside for latah! I mean… these babes are the base of your dish, right? SO OBVS. YOU NEED THEM LATER.
  • NOW, heat 2 tbsp. of olive oil in a large skillet over MEDIUM HEAT. Once heated, throw in your GARLIC FOR DAYS & sauté until FRAGRANT AF!!!
  • Once the garlic is fragrant & AGAIN, you are MELTING away at the FEELING OF BEING IN GARLIC HEAVEN, throw in your chopped white onion & sauté these babies until they begin to brown & turn translucent. THEN, ADD YOUR MUSHROOMS & EGGPLANT to the skillet, stirring CONTINUOUSLY to combine all these beautiful ingredients until cooked through (YES, this means exactly what you are thinking: CARE FOR YOUR VEGGIE MIXTURE. LOVE YOUR VEGGIE MIXTURE. WATCH YOUR VEGGIE MIXTURE. a.k.a. No Netflix for you, Glen Coco!!!).


  • Once cooked through, lower the heat to MEDIUM-LOW & add your strained tomatoes, SPICES FOR DAYS, cheddar/nutritional yeast/BOTH, almond milk, Greek yogurt, CRAB & chopped parsley! Add ¼ cup of water to the skillet & increase the heat to MEDIUM.
    • If you see that your sauce is getting too thick, ADD MORE WATER AS NECESSARY (Don’t add too much at a time – I would personally go tbsp. by tbsp. & play it by ear!
      • P.S. If you want to achieve a creamier sauce consistency, you can also add ¼ cup of almond milk/regular or skim milk instead of the water!
  • Once your sauce is ready, A.K.A. YOUR KITCH SMELLS LIKE ITALY, OR WELL, NONNA’S HOUSE, lower the heat back to MEDIUM-LOW & add your beautifully-boiled-al-denté noodles to the skillet! TOSS ALL THE BEAUTIFULNESS TOGETHER TO COMBINE. OH & UH, DINNER IS READY. WHAT?! YUP, YOU READ RIGHT, MUNCHKINS!!!



  • PLATE your babe, garnish with fresh cilantro & optional dried parsley flakes, chilli flakes and/or cheese/nutritional yeast!!!!! & SERVE IMMEDIATELY. I mean… comfort food needs to be served HAWT-AF. You do know that, right? OKAY, if you didn’t, now you do. BYE!
  • DEVOUR THE EFF OUT OF THIS BABY, THEN PROCEED TO BAWL YOUR EYES OUT WHEN YOU CAN SEE THE BOTTOM OF YOUR PLATE (You shoulda & coulda listened to what I always tell you munchkins… when it comes to my recipes, it’ll always, and I mean, ALWAYS, serve you well, to double your recipe. HECK, to triple or quadruple it. But once again, you didn’t listen & now… all that is left in the bottom of your bowl are tears. Ouch!). Oh well, guess you’ll have to get back to work & whip her up again tomorrow. At least you’ll be able to say you learned your lesson!!!!
