Happy FRIYAY night, a.k.a. HAPPY WEEKEND!!! 🙂

So, I totally admit that I MAD-TEASED you with my dinna prep on Instagram earlier today. I mean, did you really think anything less of me? I NEVER forget to tease you munchkins. Don’t ever underestimate me!!! Anywho, I’m pretty sure I MADE YOUR MINDS RUN WILD! #sorrynotsorry. You do forgive me though, right? I didn’t make you wait THAT LONG for this babe (I know, I know, a few hours seems like an eternity when the babe looks like this kind of heaven, BUT PATIENCE IS A VIRTUE, got it?).

Anywho my loves, tonight’s dinner was super simple, quick & easy to put together, yet, after your first bite (heck, simply at the sight of her), you would think I spent the whole day in the kitch with her. BUT I DIDN’T, swear!!! Not only is she simple AF, but this babe is also PACKED, AND I MEAN, PACKED AF with nutrients & all that good-for-you stuff! You literally kill like a million birds with one stone with this one – I’m talking LOADS OF PROTEIN, LOADS OF NUTRIENT-PACKED GREENS, ERGO LOADS OF FIBRE, ZERO REFINED-SUGAR, ALL THIS… & she is STILL MAGICALLY DELISH. Guys, let’s all come to terms with the fact that I am a MAGICIAN, you dig?

BEFORE WE GET INTO THE NITTY-GRITTY, THINK: Miso-baked Mahi-Mahi on a bed of oven-charred Arugula, Bok-Choy & Portobello Mushrooms DRENCHED in a Sesame Lime Ginger Maple & Garlic Sauce… HOLY EFF!!!!!! HOW THE HELL DID I PUT THIS TOGETHER? I do not even know. I could not even tell you. All I know is my kitchen smelled like MISO HEAVEN, I was legit dying (& still am ‘cause I want more!!!) & I need it to be dinnertime tomorrow STAT (Basically, I’m D to remake her & you will be too. SO DO NOT JUDGE ME!).

Guys… the flavours on this baby. AHHHHH. Don’t even get me started about all them spices. I went a little cray-cray with my Simply Organic stuff, as ALWAYS. I’m talking ginger powder, smoked paprika, cumin, turmeric, onion powder, garlic powder, dried basil, freshly ground black pepper & sea salt for days!!!!!!! OKAY, I’m done. I honestly do not even think it’s fair for me to tease you anymore. Like… you have feelings too. It’s time for me to be considerate…

On Instagram, I told you babies that this is one you will not want to miss & begged you to trust me. I hope you did. And if you didn’t, well, this post MUST HAVE TOTALLY CONVINCED YOU TO WHIP THIS ONE-PAN DISH UP! Admit it. Come on. Stop playing hard to get. It’s getting annoying.

OKAY, let’s talk INGREDIENTS!!! You down?

My loves, YOU WILL NEED:

FOR THE FLAKY-AF MAHI-MAHI:

  • 300g of Mahi-Mahi fillets (approximately 2 large fillets);
  • 2-3 tbsp. of light sweet miso;
  • Organic Himalayan pink sea salt for seasoning;
  • Freshly ground black pepper & dried parsley flakes for garnish.

FOR THE GREENS & THE MUSHROOMS, a.k.a. FOR ‘DEM VEGGIES:

  • 2 cloves of garlic, MINCED;
  • 150g of bok-choy, STEMMED & SLICED LENGTHWISE;
  • 120g of Portobello mushrooms, SLICED;
  • 75g of arugula;
  • 1 tsp. of garlic powder;
  • 1 tsp. of onion powder;
  • ½ tsp. of dried basil or thyme (I used basil!);
  • ½ tsp. of smoked paprika;
  • ¼ tsp. of ground cumin;
  • ¼ tsp. of ground turmeric;
  • ½ tsp. of freshly ground black pepper;
  • Organic Himalayan pink sea salt for seasoning;

FOR THE BEAUTIFUL SESAME, LIME, GINGER, MAPLE & GARLIC SAUCE:

  • 2 cloves of garlic, MINCED;
  • ½-1 tbsp. of soy sauce or soy sauce substitute (TRY TO FIND LOW-SODIUM, PLEASE! It’s for your own good, lovies! I’m just looking out for you!);
  • 2 tbsp. of organic toasted sesame oil (I use Maison Orphée). My loves, would you believe me if I told you that the sesame oil MAKES YOUR SAUCE? Well, this & the MAPLE SYRUP (DUH!). Basically, what I’m trying to say is, DO NOT SKIMP ON THE SESAME OIL. Okay?
  • 2 tbsp. of organic natural rice vinegar (You can totz. use the seasoned kind if you prefer!);
  • 2 tbsp. of fresh lime juice;
  • 2-3 tbsp. of pure organic maple syrup (This all depends on how sweet you want your sauce to be, my loves!);
  • ½ tbsp. of organic apple cider vinegar (I use Bragg’s, as always!);
  • 1 tsp. of ground ginger;
  • ½ tsp. of ground turmeric;
  • 1 tsp. of garlic powder;
  • 1 tsp. of onion powder;
  • ½ tsp. of dried basil;
  • ½ tsp. of freshly ground black pepper;
  • Organic Himalayan pink sea salt for seasoning;
  • OPTIONAL: 1 tsp. of Sriracha or chilli garlic sauce OR ½-1 tsp. of dried red chilli flakes.

NOW… FOR THE BEST PART… How-to whip this babe up? IT’S REALLY SO SIMPLE. You guys will freak. I mean in when I say it (in the title) that this dish will LOOK LIKE IT TOOK YOU ALL DAY, but will take you like 15 minutes to prep & 12 minutes to bake. WHAT?!?!! I am not even joking, my loves. Look how easy I have made your lives. LOVE ME FOREVER? Please! <3 <3 <3

  • Preheat your oven to 350F & line a baking sheet with parchment paper. DO NOT SET THE BAKING SHEET ASIDE (FOR ONCE!) – This is a one-pan dish, meaning, you need your baking sheet STAT.
  • Lay the arugula, bok choy & mushrooms on the parchment paper & season with garlic, garlic powder, onion powder, dried basil/thyme, smoked paprika, cumin, turmeric, salt & peppa!

  • Once the beautiful veggies are seasoned, top them with your Mahi-Mahi fillets & LATHER THEM BEAUTIFUL BABES with the miso, sea salt & peppa!

  • NOW, IT’S THAT TIME. WHAT TIME, YOU ASK? Time to whip up that DELISH SAUCE… the one you’ve been dreaming of… yeah, the SESAME, LIME, MAPLE, GINGER & GARLIC ONE. I know… the name is long, BUT I HAD TO DESCRIBE IT PERFECTLY FOR YOU MUNCHKINS! Okay, basically, just combine all the sauce ingredients in a mixing bowl & WHISK THE EFF OUT OF ‘EM until they are fully combined & you obtain a beautiful saucy-consistency!
  • Pour the beautifulness that is the sauce over your fish & veggies!

  • BAKE THIS ONE-PAN WONDER FOR 12 MINUTES. Once baked…YUP… that’s all my loves. She’s ready for you & she thirstay!!!!

  • Sprinkle this beautiful dish with some ‘mo freshly ground black pepper, dried parsley flakes & chilli flakes (If setting your mouth on fiya is your thing & stuff – GO FOR IT! But don’t blame me when you’ve scarfed down like 5 glasses of water in one sitting, kay?).
  • DEVOUR!!!!!
